Gotong Batangas as the name implies, literally means "porridge from Batangas". But Gotong Batangas is not a typical porridge that has glutinous rice in it. It is a soup made up of beef and beef tripe stripes as its main ingredients. It is served with steamed rice on the side. Batangas is a province in the Philippines that makes their own versions of recipes.
Ingredients:
1. Beef, Skin & Innards
2. Beef Cubes
3. Green Onions (Onion Leaves)
4. Garlic
5. White/Red Onion
6. Ginger
7. Whole Black Peppercorn
8. Red Chillis
9. Vinegar
10. Laurel/Dried Bay Leaf
11. Anato seeds (Coloring)
12. Lemon Grass
13. Rice Starch (Hugas Bigas)
14. Water
15. Fish Sauce (Optional)
Cooking Procedure:
- Rinse innards with Salt & Vinegar to remove unpleasnt odors.
- Use pressure cooker to tender Innards, Skin & Beef for atleast 30 minutes.
- DO NOT slice/cut Innards, Skin & Beef prior to boiling or in pressure cooker as it will burst into tiny little pieces.
- add garlic, onion ginger, bay leaf, whole Black Peppercorn & Salt
- Once Tendered boil for another 25-30 minutes with Rice starch
(depending on tenderness)
- add Lemon Grass
- Beef Cubes for tastier soup
- Anato seeds for coloring
- Add Garlic & Onions (This time NO MORE Ginger)
- Salt & Pepper to taste
- Once done. cut into small pieces
- Place in a bowl
- Top with Red Chillis
- Add some fresh slices of Onions
- add Chopped Fried Brown Garlic
- Pour your soup!
- garnish with Green onions/Leaves
- Serve with White Rice
- Enjoy with unlimited RICE!
