Try this very popular accompaniment which is a must in every Tamil household. BEANS PARUPPU USILI Ingredients 250 grams French beans, chopped ½ cup Bengal gram (chana dal), soaked for 3-4 hours and drained ¼ cup split pigeon peas (toor dal), soaked for 3-4 hours and drained 4-5 dried red chillies, soaked for 1 hour and drained ½ tsp turmeric powder Salt to taste ½ tsp asafoetida (hing) 3 tbsps oil 1 tsp mustard seeds 10-12 curry leaves Method 1. Heat a non-stick pan, add beans, ¼ cup water, turmeric powder, and salt and mix well. 2. Meanwhile, put the soaked Bengal gram in a mixer jar. Add soaked pigeon peas, soaked red chillies, asafoetida and salt and blend to a coarse paste. (Do not use water) 3. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add curry leaves and sauté well. 4. Add the blended paste, mix and cook for 6-7 minutes while stirring continuously. 5. Add the cooked beans, and mix well. Cook for 1 minute. 6. Switch the heat off and cover the pan with a lid to avoid the mixture from turning dry. 7. Serve hot.
