Were you able to guess which celebrity is a Pavlova? If you did, you know me so well. I hope you enjoyed this video :) As promised, here's the full recipe for the Strawberry Cheesecake Pavlova. Recipe - Mini Pavlova Meringues • 3 egg whites • ¼ tsp cream of tartar • 175g caster sugar • 1 tsp corn starch • 1 tsp white wine vinegar • 1 tsp vanilla • pinch of salt Cream cheese topping • ½ cup cream cheese (at room temperature) • ½ cup heavy whipping cream • 2 tbsp caster sugar • pinch of salt • ½ tsp vanilla extract Procedure - Mini Pavlova Meringues - Preheat the oven to 275°F or 130c fan/ 150 c - To ensure your mixer bowl and spatula is completely clean, wipe them with a tiny bit of vinegar or lemon juice. Use a paper towel to wipe it dry. - In the stand mixer or with a hand mixer, whisk the egg whites and cream of tartar on medium-low speed until it starts to foam. Cream of tartar will help stabilize the egg whites. - Slowly add the sugar, 1 tbsp at a time and beat the mixture on medium - high speed for a few minutes, until it becomes thick and glossy. - Add the vanilla extract and whip on high speed for 1 minute until it forms stiff, shiny peaks. - Add the corn starch & vinegar and fold in gently. - Dollop the whipped meringue onto your baking sheet and shape them as desired. (Use the back of a spoon to press a small indent in the center of each meringue.) - Bake for 50-70 minutes (depending on the size of each meringue), or until the meringues are dry and slightly crisp to the touch, but not browned or cracked (Keep a close eye on them). - Let them cool completely on a cooling rack. Cream Cheese topping - In the stand mixer or with a hand mixer, whisk the cream cheese on medium-high speed for 1 minute. -Add the heavy cream, sugar, vanilla extract & salt and beat until well combined. -Chill in the fridge until needed . Final assembly - Top each mini pavlova with cream cheese topping. Then add fresh strawberries & strawberry puree. (Make sure that the strawberries are cut into small pieces otherwise the top of the meringue will collapse due to the weight.) Serve immediately and Enjoy!
