오늘 메뉴는 일반피자보다 도우가 두툼~퐁신하고, 사각 철판에 굽는 것이 특징인 디트로이트 피자입니다. 오일을 넉넉하게 두르고, 사각철판에 구워 속은 퐁신하고 겉은 바삭한게 마치 김치전 가장자리만 골라서 먹는 맛이랄까..? 예전에 한번 먹어보고 나중에 꼭 만들어 봐야겠다고 생각했었는데, 연말을 맞이해서 친구들과 함께 먹으려고 만들어 봤어요. 생각보다 간단하니, 집에서 꼭 한번 만들어 보세요! Pizza time~~!! Today’s menu is Detroit Pizza, which has a thicker dough and baked on a rectangular baking sheet. I was shocked when I tried this for the first time. I wanted to share it with friends for the holidays. It’s simpler than you think, so try making it yourself. * Ingredients 재료 (피자 2판, 2 pizzas) 피자도우 Pizza dough 강력분 420g, 물 300g, 드라이이스트 3/4작은숟가락(3g) 꿀 1/2숟가락, 소금 1작은 숟가락(5g), 올리브오일 30ml 420g bread flour, 300g water 3g dry yeast, 1/2tbsp honey, 1tsp salt, 30ml olive oil 1. 반죽기에 모든 재료를 넣고 저속으로 10분정도 섞어줍니다. 1. Combine all the ingredients in the Kitchenaid bowl and mix for 10 minutes at Low Speed. 2. 반죽이 완성되면, 덧가루를 뿌려 스크래퍼로 굴려가며 공모양으로 둥글게 만들어 줍니다. 2. When the dough is done, dust with flour and roll it into a ball using a scraper. 3. 통에 올리브오일을 뿌리고, 반죽을 넣고 1시간정도 발효합니다. 3. Drizzle olive oil in the container, add the dough and rest for 1 hour. 4. 피자를 구울 사각철판에 미리 올리브오일을 넉넉하게 발라줍니다. 4. Generously coat the baking sheets with olive oil. 5. 발효가 끝난 반죽을 반으로 나누고, 준비한 철판위에 반죽을 올려줍니다. 5. Halved the proofed dough and load them on both baking sheets. 6. 손에 올리브오일을 바르고, 손가락 끝으로 반죽을 눌러가며 넓게 펼쳐줍니다. 6. Oil your hands and stretch the dough out on the baking sheet. 7. 30분간 발효를 합니다. 7. proof again for 30 minutes. 8. 다시, 손끝을 사용하여 반죽을 다시 넓게 펼쳐주듯 눌러줍니다. 8. again, use your fingers to press and stretch the dough. 9. 40~50분정도 발효하여 도우를 완성합니다. 9. Proof for 40~50 minutes, and the dough is ready. 피자소스 Pizza sauce 홀토마토 통조림 2캔, 소금, 말린 오레가노, 말린 바질, 토마토 페이스트 4숟가락, 마늘 반 줌 2 cans whole tomatoes, salt, dried oregano, rubbed basil, 4tbsp tomato paste, 1/2 handful garlic 1. 통에 홀토마토, 소금, 오레가노, 바질, 토마토페이스트, 마늘을 넣고 핸드믹서로 곱게 갈아줍니다. 1. Blend whole tomatoes, salt, oregano, basil, tomato paste and garlic. 2. 팬에 소스를 붓고, 수분을 날리듯 약불에서 볶아줍니다. 2. Pour out the sauce on a pan and cook on low to reduce. 3. 손가락으로 떴을때 흐르지 않는 정도가 되면, 불을 끄고 통에 담아 완전히 식혀줍니다. 3. Simmer until it’s doesn’t run on your finger. Cool completely in a container. 조립 Assembly 일단, 토핑을 올리기전에 오븐을 250도로 예열을 해주세요. First, preheat your oven at 250°C. 1. 도우 위에 피자소스를 얇게 펴발라줍니다. 1. Thinly spread the pizza sauce all over the dough. 2. 준비한 체다치즈와 모짜렐라 치즈를 듬뿍 뿌려줍니다. 2. Load up the cheddar and mozzarella shreds. 3. 그리고 그 위에 페퍼로니를 올려줍니다. 3. Top with pepperoni. 4. 오븐에 넣어 230도에서 5분, 200도에서 5분 총 10분간 구워줍니다. 4. Bake in the oven at 230°C for 5 minutes and at 200°C for 5 minutes; a total of 10 minutes. 5. 오븐에서 꺼낸 피자는 먹기좋은 크기로 6등분 한 후, 국자로 토마토소스를 올려 완성합니다. 5.     @ffwoodycooks72833 years ago Looks delicious! I like to make this, too, and they make special detroit pizza pans with flared out edges. The slight flare lets the cheese melt down the edges and you get those crispy blackened edges all the way down! 12

    @MileZeroKitchen2 years ago Looks good. Even better if you rest your dough 24-48 hours in the fridge, so you can put less yeast in there and make it crispier / fluffier! Nonetheless, great video as usual! 1
